"Akki Shavige" is an old-time favorite recipe among south Indians. It is definitely not the easiest of recipes to make, but the effort is easily worth it!
Rice is an essential element of almost every Indian meal. There are thousands of different types of rice and the preferred type depends on the country and dish.
Indian Rice Noodles are made with long grain rice. Whole-grain brown rice is a healthier choice than white rice but I am using long grain for this recipe. Perhaps, I will use brown rice next time...
Rice Noodles can be eaten hot or cold and goes very well with coconut-based curry (recipe to follow) or with any Indian pickle too.
For my Akki Shavige, I decided to make a sweet coconut curry for a tropical flavor. Unlike oriental noodles, Indian rice noodles do not need a lot of gravy. A teaspoon of coconut oil and your favorite chutney is all you need for a sumptuous meal.
Other options for flavorings are Chutney, Sambar, Avil, Sweetened Coconut Milk, or Rasayana. This is a simple preparation that celebrates the wonderful flavor of the handmade noodles.
Ingredients:
- 2 cups Idli Rice (Long Grain)
- Salt to taste
How to make this recipe
Let the rice soak in water for at least 4 hours. Strain the rice and blend it with 2 cups water and bring it to a consistency of dosa batter ( add 2 more cups). Add salt to taste.
In a medium cook pot, cook the batter until most of the moisture evaporates and the dough becomes thick. Remove off the heat and let it cool down just enough to handle the dough easily. Scoop a handful of the dough and shape them into little balls and steam cook them for about 20 minutes.
You can steam the rice balls in the instant pot. Place the Idli mold in a steamer without a pressure seal. The sweating from the steam is enough to cook the rice balls in 15-20 minutes.
Check if the dough is evenly cooked (With a toothpick) and continue to steam if they are not cooked completely. Now it time to put the noodle press or "Shavige Mane" or use a Pasta maker to work! As you press the dough, set the noodles on a flat plate.
Akki Shavige is ready! Serve with Chutney or your desired side dish.
