What do you cook when you have limited time? Well, this Quinoa salad can be ready in a flash. All you need to create this classic recipe is a handful ingredient that you can put together in 30 minutes. Quinoa is not a rare ingredient in my kitchen if you have noticed other recipes I have posted with this wonderful grain. Quinoa upma and Spicy Spinach Quinoa recipe to name a few. Coming up with this recipe was fairly easy given the fact that the tomatoes and the cucumber I used for this salad are from my backyard!
Apart from the recipe itself, I wanted to try the new Clasier cutting board that I have bought based on a great review from my peers. This sturdy cutting board also came with bamboo spatula and spoons. The cutting board holds almost 4-5 chopped veggies at the same time. So today was the perfect time to put it into action. If you are in the market for a cutting board, I’d recommend this one for sure.
Back to my salad, I have a great vegan recipe for the dressing as well. Olive oil with the right mix of lemon juice and chopped mint leaves makes it not only healthy but a viable alternative for store-bought dressings. You can also spice it up a little with paprika or chili flakes. And you can prepare the dressing within the time it takes to cook the Quinoa.

Healthy Quinoa Salad
- ½ cup Quinoa
- 1 medium sized cucumber
- 1-2 carrots
- 10 small tomatoes
- 1/2 cup canned black beans
- Pink salt
- 1 tsp ground black pepper
- Salad dressing :
- 2 tbsp lemon juice
- 2 tsp olive oil
- 2 tsp red chili flakes
- 4 mint leaves finely chopped
- Place a 3 cups of water over medium heat and add the washed and drained Quinoa.
- Cook for 15 minutes or until they are tender.
- Now chop all the veggies in your preferred sizes and place aside.
- To prepare the dressing: Whisk the lemon Juice with olive oil, chopped mint leaves, red chili flakes and salt.
- Mix the veggies and quinoa with the dressing and stir well.
