Rice Flour Flat Bread – Akki Roti Recipe!
Happy Friday to all my readers! Its back to basics in my kitchen and I am sharing an authentic South Indian Rice delicacy. Its called “Akki Roti” (Translation: Rice Bread) in the local dialect. All it is is a crispy rice dosa with a healthy serving of garden fresh vegetables. It is really up to you to make it crispy or soft & chewy, but you definitely get the goodness from carrot, ginger and dill leaves in a breakfast recipe. Not many breakfast recipes can claim that!
The recipe is fairly easy to prepare. It took less than an hour to prepare it from scratch. Like most South Indian recipes, this dish will need coconuts. I used coconut flour, but you could also use grated coconut or coconut flakes instead. Just be sure to grind them to a fine consistency before you mix it. If you are using coconut milk or coconut cream, you will have to adjust the quantity of water that you add to maintain the consistency. Check my video if you have any questions. Apart from the coconuts, the choice of vegetables is really up to you. I chose to go with grated carrots, ginger, dill leaves and green chilies. Other choices are broccoli, radish, and cilantro leaves.

One word of caution is that rice flour is inherently dry in nature and it is normal to have a few imperfections on the dosa, when you roll them.

- 1 cup rice flour
- ¼ cup coconut flour
- ¼ chopped onion
- 3 tbsp grated carrot
- 2 tsp ginger
- 2 small green chilies
- ¼ dill leaves
- Salt to taste
- Water ( as required)
- 1-2 tbsp oil
- In a big bowl mix all the ingredients one by one
- Add few tablespoons of water to bring the consistency of a dough. Not too thick or too watery.
- Make small balls and place them aside.
- Place them between two parchment papers and gently roll them until they are flat. (See video for directions)
- Place a pan over medium heat. Drizzle a drop or two of vegetable oil.
- When pan is hot, fry the rotis (Dosas). Flip them until you get the desired crispiness.
