Today, I want to share the best version of tomato soup I can think of. One with the tangy taste that we like, along with the wholesome goodness of Quinoa.
As you may have noticed, Quinoa takes a special place in my kitchen. I have shared several quinoa recipes in the past like Spicy Spinach Quinoa and Quinoa Salad. But how does this recipe differ from the others? You will notice that this is not the plain quinoa that you get in any grocery. It is “sprouted” Quinoa blend from truRoots. Sprouting process breaks the seed’s protective coating naturally and brings out a rush of nutrients. But how does Quinoa pair up with tomato soup? That’s what you are going to find when you try this recipe. Depending on your serving size, this tomato soup can also be a meal replacement because there is a good amount of protein contribution from quinoa. Preparing the quinoa is simple. Just follow the directions in the pack. It cannot be any easier. I finished the entire recipe from start to finish in less than 30 minutes.

- 5-6 medium sized tomatoes
- 2 large carrots
- 1 bay leaf
- 1 small cinnamon stick
- 1 garlic clove
- ½ cup dry sprouted Quinoa trio
- 1 tsp pepper corn
- 4-5 cloves
- ½ coconut milk
- 1 cup of chopped cilantro
- Salt to taste
- Cook the sprouted Quinoa trio as per the direction of the packet and place it aside.
- Place a bowl over medium heat and add all the ingredients listed above except coconut milk and quinoa, one by one.
- Cook until they are soft and take the bowl off the heat. Let them cool and blend all together for a creamy consistency.
- Place the same bowl over medium heat and add the blended soup back and let it simmer.
- Add coconut milk and stir well.
- Add cooked sprouted Quinoa trio and continue to stir.
- Let simmer for 5 minutes.
Sprouted Quinoa Tomato Soup is ready to serve with some fresh bread.
