Indian Style Easy Vegan Honey cake recipe!
I want to share one of my favorite childhood cake recipe…in a vegan style. It is the good old Honey Cake! The name itself seems so attractive and looks are even more so. Preparing this wonderful cake in a vegan way was not that difficult or challenging as it seems. “Honey Cake” does not need honey after all. If anything, finding a replacement for eggs is the challenge, but I have solved that in other recipes like mango bread.
For this recipe, I used flax meal as a replacement for eggs and soymilk as the milk replacement. I also used diluted maple syrup instead of sugar syrup. Getting a nice and fluffy texture was not at all difficult. That’s all it takes to switch to a vegan style. If you are not able to find flax meal at your grocery store, I have added a few Amazon links at the bottom, to make it easy for you.
The recipe is a quick one to put together and would make a wonderful picnic snack cake or to satisfy a late night craving. The unmistakable flavor of maple syrup and mixed fruit jam gives this tender cake a lovely finish. You could also garnish with sliced almonds if you prefer a nutty flavor. I chose to garnish with coconut flakes just like I remember from my childhood days…:-)
