Vegan Potato Halwa Recipe  – Potato Halwa is  a common dessert in India. Potatoes are as versatile as they are delicious. It can be the main ingredient in a curry or in a creamy dessert.
I have posted several potato recipes in the past, but I think this dish would be the first vegan potato dessert. As common as it is in India, Potato Halwa needs lot of ghee (Dairy product alert!). So I tried making the creamy dessert with healthy plant based substitutes. In this case today, its Olive oil, that does the trick.  No compromise in taste or texture. On a similar note, I have also tried Vegan Rava Kesari that also turned out very well.

I chose organic red potatoes for this dessert because they offer deeper flavors than the brown kind. The skin, although edible is not required for this dish. One simple trick I found when I prepared this dish is that grating the boiled potatoes makes it a lot easier when you mix them in, instead of mashing them. This will ensure there are no lumps left. Ingredients:

  • 6-8 medium sized potatoes
  • 1 1/2 cup organic sugar
  • Pinch of salt
  • Orange food color
  • 1/4 tsp crushed cardamom powder
  • 3/4 cup olive oil
  • 1/2 cup crushed nuts (almonds and cashews)

Directions:

  1. Boil the potatoes in a pressure cooker (or any pan).
  2. Peel the skin and grate them.
  3. In a hot pan, put the grated potatoes and add organic sugar.
  4. After sugar dissolves completely, add olive oil and continue to stir
  5. When the oil appears to be absorbed, add food coloring and crushed cardamom (Elaichi).
  6. Continue to stir it constantly and add crushed nuts (Almonds, Cashews etc)
  7. After about 10- 15 minutes, Halwa thickens and gives out a nice aroma.
  8. Turn off the heat, as you notice the bubbles slowing down.
  9. Set the dessert on a greased casserole and let it cool.
