The cookies turned out unbelievably light yet chewy.

Vegan Mango Custard CookiesBeing a die hard fan of mangoes, it was just a matter of time before I tried this recipe. Its one of the simplest and easiest cookie recipe with ingredients that are staple in everyone’s pantry. I have already prepared these cookies several times with subtle flavor changes. The combinations of ingredients I have posted here turned out the best. You can try a few variations by adding almond slivers or macadamia nuts to suit your taste.

Ingredients:

  • 1 stick vegan butter (Earth balance)
  • 1 cup powdered sugar (Organic)
  • 1/4 cup + 1 tbsp Mango Custard powder
  • 1 1/4 cup All purpose flour
  • 1/4 cinnamon powder
  • 1 tsp vanilla extract
  • 1/2 cup Aquafaba (water from canned chick peas)

Directions:

  1. Preheat oven 375 F
  2. Mix butter, sugar, vanilla extract and aquafaba one by one in large bowl and place them aside.
  3. Now mix all the dry ingredients evenly and add the wet ingredients and mix well until there are no lumps. Set the dough aside for 10 minutes.
  4. Make round balls with the dough and toss them in sugar. Place them on a baking sheet and gently press by fork.
  5. Bake for 12 minutes or so, until the cookies turn golden.
