Protein Packed PulaoProtein Packed Pulao! Pulao can be done in different methods using different combinations of spices and vegetables. Today, I am sharing my own method with black-eyed beans and Soy chunks. This is the kind of recipe where you want to have all your spices and vegetables measured and set up ahead of time, because once you start cooking everything comes together fairly quickly.

Protein Packed PulaoI tweet and send PM to my readers often and one of the questions I recently asked is that what their #1 challenge is when it comes to preparing dinner after a long day of work. The most common answer I hear is having to prepare a main dish and a side dish. But the solution to the problem is not very hard. A protein packed pulao is what you need. Fresh vegetables and black eyed beans, seasoned with spices and chewy soy chunks make up this protein powerhouse. It is a one top solution for the daily servings of vegetables, and protein. Moreover you will have less dishes to clean after this recipe.

A quick tip about cooking rice: Rinse the basmati rice really well in cold water for 5-6 times until the water is clear. This will rinse the starch off the rice and improve its texture when it boils.

Ingredients:

  • 2 cups Basmati Rice
  • 1 Onion chopped
  • 1 cup carrots chopped
  • 1 cup green beans chopped
  • 1 cup cooked black eye-beans
  • 3 ½ cup water
  • Salt to taste
  • 3 tsp oil
  • 3-4 cloves
  • 2 star anise
  • 2 bay leaves
  • 1 tsp black pepper seeds
  • 2 tsp coriander seed
  • 2 red chilies
  • 2 green chilies
  • 2 tsp ginger
  • 2 garlic clove
  • ½ cup soy chunks
  • ½ cup grated coconut
  • 1 tsp chili powder

Directions:

Protein Packed PulaoSoak the rice for 30 minutes in water and boil the soy chunks in water. Meanwhile, prepare the vegetables and have them ready.  Place a vessel over medium heat and drizzle in 2 tsp of vegetable oil. Saute the spices  and add garlic, ginger and green chilies. Continue to saute for a minute.

veg pulaoAdd 2 tbsp of chopped onions and fry until they turn transparent.  Switch off the heat and add grated coconut. Let it cool down and then blend it with 1/4 cup of water to a smooth consistency.  Place a big vessel over medium heat and boil the (strained) rice with 3 ½ cups of water. Cover the lid.

Veg PulaoAfter about 10 minutes, add chopped veggies and continue to boil the mixture.

veg pulaoAfter about 5 minutes, add the blended paste and salt. Stir well and cover the lid. Meanwhile, fry the chopped onions with 2 tsp of oil. As they turn golden, add 1 tsp of red chili powder and fry for 1-2 minutes. Now add the cooked black eye beans, fried onions and cooked soy chunks  to the rice and stir well. Remove off the heat.

Protein Packed PulaoProtein Packed Pulao is ready to serve. Serve hot and garnish with cilantro leaves or cucumber. You can serve with gravy or  raita.

Cook Time: 40 minutes

Yield: 6 People

  5. Place a big vessel over medium heat and boil the (strained) rice with 3 ½ cups of water. Cover the lid.
  6. After about 10 minutes, add chopped veggies and continue to boil the mixture.
