Rice Halbai – Rice Cake Recipe

Dessert with Rice…”Rice Halbai” 

Rice HalbaiMy dessert series continues this week with an ethnic recipe from deep inside heart of Karnataka.….Sweet Rice Cakes or locally called as “Rice Halbai”.

Its made with rice blended with coconut for a tropical flavor that is both mildly and pleasantly sweet. I made this dessert for Navarathri, that marks one of India’s festivous season. Preparing Halbai can be tricky if the ingredients are not in right proportions. I got it right after a few trial and errors. Hence, I couldn’t resist sharing this fantastically delicious and season appropriate dessert for this week. There is nothing like finishing up your evening with a luscious dessert.

Rice Halbai

The flavors of the coconut and jaggery render the perfect treat for Navarathri. The ghee (Clarified butter) tops it all off giving you a creamy and robust dessert. Prepare it today and you’ll impress your friends. All of the work for Halbai is on the stove top. Apart from the proportions, the tricky part is to cook it for just the right amount of time. Halbai can be made with wheat or finger millet instead of rice, but rice is my favorite for its consistency. Check out my video to get a better idea about batter consistency.

Ingredients:

  • 2 cups dosa rice or any long grain rice. ( soak for 1 hour)
  • 1 cup grated coconut
  • 1 1/2 cup grated jaggery
  • 1 tbsp ghee/ clarified butter
  • ¼ tsp salt

Directions:

Rice HalbaiGrind the soaked rice, grated coconut, jaggery all together with 2 cups water.  Place a vessel over medium heat, cook the ground batter.

Rice cakesContinue to mix and cook until the batter gets thick enough like I show in this video. Add water, if it gets too difficult to mix.  Add 2 tbsp ghee  and continue to mix well. Remove off the heat and pour it onto to a greased pan and let it cool. When it is warm enough to handle, cut them into 2″squares.  That’s it! Halbai is ready to be served with a little ghee melted on top!

Cook Time: 30 minutes

Notes

Rice should be soaked 1 to 2 hours.
