Sun dried Ginger PreservesIf you are looking to make a tasty snack out of ginger, look no further than “Sun-dried Ginger Preserves”. It’s a snack with medicinal benefits, that has its origins from India (Called “Murabba” in local dialect). You may remember I wrote about the goodness of ginger in my “Healing Secrets of Food” page.

Ginger is a common ingredient in a number of recipes that I have posted, but this is the first time I am posting a ginger snack. With cook time of less than 20 minutes, I don’t think you will have a reason not to try this and your family will not have a reason to say no.

Sun Dried Ginger PreservesAlmost every recipe for preserves call for lot of sugar that dominates the main ingredient. Sun-dried Ginger preserves is different that way. I use honey to carry over the benefits of ginger. I should tell you that, in general, ginger acts largely as a preserver and a subtle sweetener. Honey gives it a brilliant shade of golden yellow color and also preserves the gingery flavor. It is a gratifying way to celebrate the waning days of summer.

Ingredients:

  • 1/2 cup chopped Ginger
  • 3 tbsp organic Honey

Sun dried ginger preserves

Cook the chopped ginger with 1/2 cup of water until ginger softens. Drain the water.

sun dried Ginger preservesPlace the ginger under direct sunlight or use a food dehydrator until the ginger loses its moisture (Approximately a day). Place all the ginger slices in a jar  and add honey. Cover the lid let it steep for 24 hours.

Keep the ginger preserves refrigerated and serve chilled as a mid-afternoon snack with your favorite hot beverage.

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Serving Size: 1 Spoon

Ingredients

Instructions
