After a week of near summer-like temperatures, it was down to 70’s this week and that makes it a perfect weather for DalBright and vibrant spinach leaves are not only appealing to the eye but also nourishing as well. Lentils are relatively quick and easy to prepare, and their low cost makes them an accessible form of high – quality protein.

Spinach Dal Recipe

When we combine the lentils with the goodness from spinach, we get a super food that’s my recipe for today: Spinach Dal. For this recipe, I combined three lentils together with the spinach leaves. So it has a good balance of protein as well as fiber. The result is a heavenly dish that goes very well with rice, roti’s and bread.

If you serve this dal with any vegetable stir fry, you can easily get two meals out of it for a family of four. I like to put one of these together on a Sunday afternoon and have leftovers for Monday.
