Ingredients:

  • Half of the cauliflower chopped
  • 1 cup rice ( Basmati or Jasmine)
  • 4 cloves
  • 1 bay leaf
  • 3 cinnamon pieces
  • 1 tsp cumin seeds
  • 1 garlic clove chopped
  • 1/4 inch ginger chopped
  • 1 small onion chopped
  • 2 tomatoes chopped
  • 1 tsp chili powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1 tbsp olive oil
  • 2 green chilies ( optional)
  • 2 star anise

Spiced Cauliflower RicePlace a deep vessel over medium heat with 1 tbsp of oil. When the oil heats up, drop the bay leaf, cloves, cinnamon pieces and cumin seeds. Fry it for about a minute.  Add chopped ginger and garlic and continue to fry until they turn golden.  Add chopped onions and saute until they turn transparent.

Spiced Cauliflower RiceAdd chopped tomatoes, 1 tsp of turmeric powder, chili powder and garam masala powder. Continue to cook and stir until tomatoes are softened.  Add chopped cauliflower and salt to taste. Place a cover and allow to simmer it for 5-8 minutes.  Take the pan off the heat and mix the cooked rice with cauliflower masala. Take the pan off the heat and mix the cooked rice with cauliflower masala.

  6. Add chopped cauliflower and salt to taste. Place a cover and allow to simmer it for 5-8 minutes.
  7. Take the pan off the heat and mix the cooked rice with cauliflower masala.
  8. Serve with your favorite raita and pickle.
